Optimum Nutrition through Power Cookies

Everybody loves a good cookie – its my husband’s favorite food group. We came across an amazing recipe that we make and they last us two weeks for snacks after the girls’ gymnastics and in school lunches.

Dry Ingredients

  • 1 cups spelt flour
  • 1 cup whole wheat flour (or other flour mix: try a blend of tapioca flour, potato flour and rice flour)
  • 1 cup oats (try spelt oats)
  • 1/3 cup pumpkin seeds
  • 1/3 cup sunflower seeds
  • 1/2 cup sesame seeds
  • 3/4 cup raisins
  • 1/2 cup ground flax
  • 1/2 cup hemp seed
  • 3/4 – 1 cup chocolate chips
  • 3/4 cup coconut
  • 3/4 cup walnuts chopped
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda

Wet ingredients

  • 1/3 cup brown or coconut sugar or honey
  • 2 eggs
  • 1/2 cup grapeseed oil
  • 3/4 cup plain yogurt (optional)
  • 1 – 2 shot espresso or left over morning coffee (optional)
  • Soya or almond milk to consistency

Drop on to greased cookie sheet and press down with fork. Bake at 365 till fairly firm to touch.
